Grown in the rich soils of the Apaneca-Ilamatepec volcanic range in El Salvador's Santa Ana region, this coffee is part of the family legacy of fourth-generation producer Mauricio Escalón.
Hand-picked at 1,250 metres, the cherries ferment for 60 hours without oxygen. The process builds an intensely aromatic profile without tipping into over-fermentation: the fruity sweetness of white grape and golden raisin meets a balanced caramel body in the cup.
